Fermenterie BIONIC®
BIONIC was born from a clear conviction: fermentation deserves better than an austere, medicalised or marginal discourse. It can become an everyday gesture — demanding, good, desirable and accessible at scale.
BIONIC® isn't a rootless brand. It is published by MealMe Sàrl, in Payerne, in the canton of Vaud, and designed for Switzerland: Swiss production, a short range, careful delivery across the country. This grounding isn't a marketing argument — it's what makes the promise tenable, from vegetable to packaging to your kitchen.
Working from Switzerland demands a standard: chilled storage tolerates no shortcut, consistency is checked batch after batch, and every step must stay coherent with what the product claims to be. It's a constraint we take on, because it protects exactly what gives the product its value.
At the heart of BIONIC there is cabbage. A cool-season vegetable that builds slowly as the nights draw in and temperatures drop — that's when it reaches its true density: tight leaves, a firm texture, a clean taste. Choosing the right moment isn't a romantic detail: it's the first decision that determines the quality of the finished product.
In Switzerland, cabbage belongs to simple tables, cool seasons, mountain regions and meals that bring people together. Sauerkraut here is well known, popular, rooted — often reduced to a cooked side. We take this humble material and work it with precision into a living, fresh and premium product: cabbage, salt, time.

BIONIC is building a premium food and lifestyle brand, driven by a real product standard. A brand able to exist at once in people's everyday life, in retail and, tomorrow, in wider professional channels.
Our most structuring choice is also the most demanding: unpasteurised. We prefer a living product to a sterilised one. This choice preserves the taste profile, the texture and the tension that make a lacto-fermented vegetable interesting — but it requires us to hold a logistics with no approximation.
Many would have simplified. We chose the opposite: to take on complexity when it serves the product, and to hide it when it's none of the customer's concern. It's this line — demanding, readable, with no medical discourse or hollow promise — that guides every recipe and every brand decision.
