Fermentation worked to a standard.

At BIONIC, fermentation is neither a backdrop nor an empty argument. It's a living process that we frame with precision to aim for a clear, stable result, true to our level of standards.

We work fermentation as a balance between nature and control. The goal isn't to overdo it. The goal is to obtain a coherent, pleasant, safe and desirable product, batch after batch.

Proofs of method

The markers that frame our production

Four concrete points that make BIONIC fermentation more readable: a monitored process, consistent quality, chilled storage, unpasteurised.

01

A precisely monitored process

Every step of the cycle is framed, controlled and documented, aiming for stable quality batch after batch.

02

Consistent quality

A constant level of taste, acidity and texture that makes the product reliable over time.

03

Chilled storage

Chilled storage held from production to shipping, without shortcut, to preserve the batch profile.

04

Unpasteurised

We prefer a living product to a sterilised one: more demanding, but true to our reading of the living.

Our process

The BIONIC cycle, step by step

From vegetable selection to delivery, our work is to guide the living without distorting it.

01

Vegetable selection

We start from raw materials we judge right enough to carry a precise, consistent fermented product.

02

Preparation

Cutting, washing and seasoning are worked with care to preserve texture and lay the foundations of a clear taste.

03

Fermentation

The lactic activity is started and framed in controlled conditions for a mastered biological dynamic.

04

Process monitoring

We track the batch’s evolution to aim for a stable acidity, a held texture and a coherent profile.

05

Packaging

Without pasteurisation: the product stays alive and keeps its full signature of taste, texture and identity.

06

Careful delivery

Shipped in insulated packaging, across Switzerland in 5–7 business days, to preserve the product’s quality all the way to your kitchen.

Why we don't pasteurise

Pasteurisation simplifies logistics, but profoundly alters the product profile. We chose another path: keeping our products chilled to preserve their character, their texture and their identity.

Why it changes the experience

This choice commits the whole chain: production, storage, delivery and the way the product is lived day to day. It's more demanding, but it's also what gives BIONIC its coherence.
